  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups chicken broth
  • 1 lemon, juiced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a baking dish, combine orzo, olives, feta, olive oil, oregano, garlic powder, salt, and pepper.
  3. Pour chicken broth and lemon juice over the mixture, stirring to combine.
  4. Place chicken breasts on top of the orzo mixture.
  5. Bake for 25-30 minutes until chicken reaches 165°F (74°C) internal temperature.
  6. Let rest for 5 minutes before serving.

Notes

  • Chicken thighs work well as a substitute for breasts.
